Vegan – Bean and Cacao Brownies with Coconut

Makes 10 Brownies

2 cups cooked black beans, drained (soak overnite, simmer for 2 hrs on low heat)

10 dates

1/2 cup of almond milk

2 tbsp Coconut Oil

5 tsp almond meal

1 1/2 tsp natural vanilla extract

5 tsp cocoa powder

3 tsp cacao nibs

1 1/2 tbsp baking powder

pinch of  salt

top with coconut shreads

– Heat oven to 350 F / 175 C.

– In a blender or food processor, add the beans, dates, vanilla, cacao nibs, cocoa powder, coconut oil, salt, and coconut milk and blend well.

– Add baking powder and almond meal.

– Spoon the brownie batter into a baking dish. Bake for about 40-45 minutes until toothpick comes out clean, garnish with  coconut shreads 5 minutes before 45 min mark and take it out of the oven.  Enjoy!
